LEEK, POTATO AND STILTON SOUP

Serves 4 .

INGREDIENTS

12oz leeks thoroughly washed and trimmed

9oz stilton, crumbled plus extra to serve

2oz butter

2 medium potatoes

2 bay leaves

3 heaped tablespoons yogurt

salt and ground black pepper

METHOD

Cut the leeks into finger-thick rounds and put them into a deep pan with the butter. Cook them slowly, over a low-to-moderate heat, covered. After about 20 minutes, and with the occasional stir, they should be soft and squashy. Meanwhile, peel the potatoes, cut them into chunks and add them to the pot with the bay leaves and 1 litre of water (1 3/4 pints), and bring to the boil. Turn the heat down to a simmer and leave to cook for 20 minutes.

Remove the bay leaves, add the crumbled cheese, then whiz to a creamy puree in a blender or food mill. Season with black pepper - it is unlikely to need much salt. Pour into warmed bowls, stir in the yogurt and pass a bowl of crumbled Stilton round for those who want extra.

 

FRENCH PANCAKES !

I not sure where this came from, however its been enjoyed by me, and other members of our household over the years !! - Never Seen it in France !!

2 Eggs, 2 oz Butter, 2 oz Sugar, 2 oz Flour, 1/2 Pint Milk

( this makes about six small ramekin dishes )

Cream the butter and sugar, add the eggs, then flour. Stir in the milk. now butter your ramekin dishes, add the mixture and bake in a moderately hot oven until golden brown and them serve and enjoy !!!

 

PAUL'S FAVOURITE CURRY - BALTI STYLE CHICKEN

Serves 4

2lb Chicken Brest Cut into pieces, 3 tbs Oil, 3 Medium onion or 1 Large, 1 Tin chopped tomatoes, 2 in / 5cm Cinnamon stick, 6 Cardamom Pods, 6 black pepper corns, 1tsp cumin seeds, 1 tsp ginger pulp, 1 tsp garlic pulp, 2 tsp garam masala, 1 tsp Chili power, 1tsp salt, 2 tbs plain yogurt (optional ), 2 green chilies chopped (optional), water.

METHOD

Fry the chicken in a large Wok or frying pan, until just golden on the edges and set aside. Now fry the onions until golden brown, and the tomatoes and some water and stir well.

Add the cinnamon, cardamoms, peppercorns, cumin, ginger, garlic, garam masala, chili power and salt, stir well and cook for about 3 / 4 minutes. Now add the chicken cook for about 20 minutes, checking that the food is not 'sticking' on the bottom of the pan.

Finally add the yogurt and Green Chili and Serve with rice and or Nan bread.
